    Traditional Jalebi

    Traditional Jalebi
    Jalebi or Jilapi is a sweet popular in countries of South Asia, the Middle East, North Africa and East Africa. It is made by deep-frying flour batter in pretzel or circular shapes, which are soaked in sugar syrup.

    Ingredients:
    For batter
              1 cup Maida

              2 tbsp Corn flour

              ¾ cup plain Yogurt

              ½ tsp Baking Soda

              2 tbsp melted Ghee or Oil

              A pinch of Turmeric powder
              Water, as needed

    For Sugar syrup
               1 cup Sugar
               ½ cup Water
               1tsp Lemon juice
           And
               Oil/ ghee for frying
              3-4 threads Saffron


    Method:
              Whisk together all the batter ingredients in a medium bowl to form a thick batter.
              Cover the bowl and leave the batter to ferment in a warm place for 12 hours or overnight.
              To begin with make sugar syrup, take sugar and water in a saucepan. Boil them till the sugar dissolves and forms one string consistency which you rub some syrup with your thumb and index finger and stretch it a thread forms and that is single thread consistency. At this point add lemon juice and Saffron. And off the flame.
              Now transfer the batter to a ketchup bottle or a Ziploc bag.
              Heat Oil in a kadai, once the Oil is hot turn the ketchup bottle upside down and make quick round swirls in the oil.
              In a very low flame fry the jalebis ,flipping both the sides till crispy.
              Once fried transfer the jalebis to the prepared sugar syrup and soak them just for1 to 2 min and them remove them quickly in a plate.
              Repeat the same for the rest of the jalebi batter.
              Serve it as a dessert.
