Gazar ka Halwa

'Halwa' is Arabic for 'Sweet'. This grated Carrot dessert pudding is usually associated with festivals like Eid; but is equally hit during Ramdan's Iftaar as well.




Makes/Serves: 3 to 4 Servings

Ingredients:
·  2 cup washed, peeled and coarsely grated Carrots
·  1/2 cup Ghee (Indian Clarified butter )
·  1/2 cup Sugar
·  1/2 cup Milk Powder
·  1 tsp Cardamom Powder
·  1 tbsp Raisin
·  1 tbsp chopped almonds

Method:
·  In a hot pan, add Ghee and Carrots. Cook it on medium heat until the Carrots are tender. Approx ~5-10 mins
·  Add Milk powder stirring continuously on low heat. Approx ~2-3 mins
·  Add Sugar stirring continuously on low heat. Approx ~3-4 mins
·  Add Cardamom powder, and mix well
·  Add Raisin and chopped Almond and cook. Approx ~1 min
·  Serve hot or warm or chilled cold

Cook Tip: You can replace dry milk powder with ‘Khoya*’. You can use whole milk.

*Khoya: A dairy product widely used in subcontinent, made of either dried whole milk or milk thickened by heating in an open iron pan.
