Makes/Serves: 6 muffins
Ingredients:

1 Bell Pepper
•
1 Spring Onion
•
1 Tomato
•
2 tbsp boiled Kala Chana
•
2 cup Egg white
•
A pinch of Salt
•
Handful of Spinach
•
2-3 Curry powder (optional)
•
Muffin tin
Method:
•
Preheat the oven to 200°C/ 390°F.
•
Wash and dice the Pepper,
Onion, Tomato and chopped Spinach and put them in a large mixing bowl with Kala Chana.
•
Then add the Egg white and Salt,
Curry powder. And mix well.
•
Grease the muffin tin with oil and pour
the egg mixture evenly into the muffin tin.
•
Bake them for 15-18 minutes or
until the tops are firm to the touch.
•
Serve it.
