Pineapple fried rice is a popular
Chinese rice dish. It is very easy to make.
Makes/Serves: 3-4 servings
Ingredients:
•
1 ½ cup long grain Rice
•
1 Onion finely sliced
•
2 Eggs beaten with a dash of salt (optional)
•
½ cup Red Bell Pepper
•
½ cup chopped Carrot
•
1 tbsp Soya sauce
•
2 tbsp Oil (sesame oil)
•
1½ cups chopped fresh Pineapple
•
2 cloves minced Garlic
•
1tsp Ginger powder
•
¼ tsp Turmeric powder
•
½ tsp Black Salt
•
Salt to taste
•
One handful fresh chopped Green Onions
•
One handful fresh chopped Cilantro
leaves
Method:
•
At first cook the rice (rice should
be tender). Then refrigerate it for about 15 min.
•
After 10 to 15 min. add a little
oil to the rice (up to 1 tbsp.) and mix rice and oil with your fingers. You
want to separate the grains of rice, so that they don't stick together. Set
aside.
•
Heat sesame oil in a large pan over
medium-high heat add Onion and garlic sauté for few sec.
•
Then add all the vegetables, season
with turmeric powder, ginger powder, black salt and mix well. Stir frequently and
cook it for about 8-10 min. (do not cover)
•
Now add the egg to the veggies and
cook for about 1 min.
•
Then add the cooked rice and mixed
well.
•
Now add the chopped Pineapple and
cook it for about 2 to 3 min or until Pineapple changes its colour.
•
Now add soya sauce. Stir it well.
•
Add chopped green onions, chopped
cilantro leaves.
•
Serve it hot.
