Fried Chicken

Ingredients:
          6 Chicken  pieces
          2 Eggs (beaten)

          1 cup buttermilk


          1 cup all-purpose flour 

          1 tsp Chili powder 

          1 tsp Black pepper 
          2 tsp Salt  

  

          1 tsp Onion salt 


          1 tsp. Garlic powder 
          4 cup Breadcrumbs
          Oil for deep fry
                                      


Method:
           Take buttermilk, Garlic powder and Onion salt in bowl, Soak chicken pieces in this mixture for about 3hr.
           In a separate bowl add Flour, Salt, Chili powder and black pepper .
          In another bowl take the breadcrumbs.
          Now roll the Chicken pieces in seasoned flour mixture until completely covered then dip the seasoned chicken in the beaten Egg and leave them aside.
          Now again coat the Chicken pieces with breadcrumbs until completely covered.
          Now in a large frying pan heat the oil.
          Fry the Chicken pieces very gently for about 5 to 8 minutes or until golden brown.
          Remove chicken and drain on paper towels or rack.
          Serve hot with any sauce.

Cook Tip: Instead of using breadcrumbs you can use corn flakes crumbs.

Grill Chicken on Stove-Top (Grill Pan Method)



Ingredients:
          500gm Chicken 
          ½ cup Yogurt
          2tbsp Olive oil
          1tsp Ginger- Garlic paste
          1tsp Curry powder
          1tsp Paprika
          ½ tsp Chilli sauce
          ½ tsp Black Paper 
          1tsp Tomato paste
          2tsp Lemon juice
          Salt to taste

Method:
          Whisk together yogurt, curry powder, lemon juice, oil, ginger- garlic paste, salt, paprika, black pepper, chilli sauce, tomato paste in a medium bowl. Now add chicken pieces and Place in refrigerator and marinate for 4 to 8 hours.
          Now heat a grill pan to high heat for about 2-3 minutes. Lower the heat to medium-high and  brush oil to the pan and make sure the entire pan is coated with oil.
          Then add the chicken pieces to pan and cook for 7-8 minutes on the first side without moving until the undersides get dark grill marks. Flip the chicken pieces and cook the other side for 7-8 minutes.
          Turn off heat and sprinkle lemon juice.
          Serve hot.

Pudina Chicken


Pudina Chicken is very delicious recipe .It can be served with rice or roti.

Ingredients:
          4 Chicken drumsticks (washed)
          1tbsp curd
          1tsp Chili powder
          ¼ tsp Turmeric powder 
          ¼ tsp Black Pepper powder
          1tsp Ginger -Garlic paste
          1tsp Garam Masala powder
          1cup Mint paste(Pudina paste)
          ¼ cup Coriander leaves paste
          1tsp Green Chili paste (optional)
          ¼ cup chopped Coriander leaves
          1tsp Lemon juice
          1tbsp Oil or Butter
          Salt to taste

Method:

           In a bowl take Chicken pieces and the other ingredients and mix well. And let marinate the Chicken for at least 2 hrs.
           Now in a pan heat the Butter and add the Chicken drumsticks. Then fry the Chicken pieces till well cooked on medium heat.
          Now add all the remaining marinate and cover it with a lid and cook it for about 5 to 6 min on medium heat. 
          Now add chopped Coriander leaves to garnishing.
          Serve hot with roti or rice.
