Egg Chop

Egg Chop is a super snack which is very easy to make and very yummy too.


Ingredients:
          12 Eggs
          2 Eggs
          10-12 boiled Potatoes
          1 teaspoon Turmeric powder
          ½ teaspoon red Chili powder
          1 teaspoon garam masala powder
          Salt to taste
          2 cups breadcrumbs
          Vegetable or Canola oil for deep frying
          ½ cup chopped Coriander leaves 

 Method:
          Boil 12 eggs till hardboiled. Immerse immediately in cold water and then peel. Keep aside.
          In a large mixing bowl take the boiled Potato, Turmeric, red Chili, garam masala powders, Coriander leaves and Salt. Mix well to form a dough . Divide into 12 equal portions.
          Take one egg and a portion of the Potato mix. Wrap the potato mix around the egg and smoothen with your hands to form an even casing around the egg till it is fully covered.
          Repeat for all the remaining hardboiled eggs. Place all in a plate.
          Whisk remaining egg in a bowl. Then gently dip each potato-coated egg into beaten egg and then coat it with breadcrumbs.
          Heat the oil for deep-frying in a deep pan. Then drop them into oil and deep fry till golden. When done, drain and place on paper towels.
          Serve hot.

Fish Fritters


Fish Patties or Fish Fritters are the best, can be turned into patties for burgers. Or you can have them as a snack.


Makes/Serves: 6 to 8 pieces

Ingredients:
          3 Tilapia fish (about 300gm)
          1midium Potato (boiled and mashed)
          2tbsp Corn flour
          2tbsp chopped Onion 
          1tsp chopped or paste Ginger and Garlic
          1to 2 chopped Green Chili (optional)
          ½ tsp Coriander powder 
          ½ tsp Fennel powder 
          ½ tsp Pepper powder 
          2tbsp chopped Coriander leaves
          Salt to taste
          Oil for deep frying

Method:
          Wash the fish pieces and set aside for the water to dry.
          Marinate the fish with ½ tsp of Turmeric and ½ tsp of Red Chili powder and salt then keep aside for about 10min.
          Heat a kadai on medium heat and add 2tbsp of Oil, fry the fish on each side for about 3min.then bring out them on a plate. And let it cool.
          Now separate the bone from the fish.
          Now in a bowl add fish, boiled potato and all the other ingredients. And combine them very well.
          Prepare small flat and round cutlets by taking small sized tennis ball of fish and potato mixture and gently pat it to form a disc shape of even thickness.
           Heat oil in a pan on medium heat. When the Oil is really hot (not smoking) add the cutlets and fry it till it is golden in color. Drain on a paper towel .(you can shallow fry them).
          And it is Ready to serve.

Cook Tip: you can use egg and breadcrumbs for coating.  For this coating you have to gently dip each patties into beaten egg and then coat it with breadcrumbs on the both sides and then fry them.
