Fish Eggs Fritters



Fish Eggs Fritters are very easy to make. You can have them as a snack or can have it with rice and dal during lunch or dinner.
Ingredients:
           Rui/Katla/ilish fish eggs (approx. 3cup)
          1cup Corn flour
          2/3 pinches Baking Powder (optional)
          2tbsp Breadcrumbs
          1 chopped small Onion
          ¼ tsp Turmeric powder
          ½ tsp Chili powder
          Black Pepper powder
          2 /3 chopped Green Chilies
          1tsp Soya Sauce (optional)
          Oil for deep frying
          Salt To taste.

Method:
          Wash and drain the fish eggs. Add 1 tsp of soya sauce and make sure that the fish eggs are well mashed.
          Now in a bowl add Corn flour, Baking powder, Onion, Green chilies, Black Pepper powder, Turmeric powder, Chili powder, Breadcrumbs and salt to taste. And mix them well.
          Make small patties out of the mixture and slowly slip it into hot oil. Fry them till they turn light brown.
          Remove from oil and place on absorbent papers to absorb excess oil.
          Serve hot with Tomato sauce.

Cook Tip: Soya sauce contains salt be careful while adding salt.

Baked Vegetable Samosa


A samosa is a fried or baked pastry shell stuffed with fillings like vegetables, meat or fruits.


Makes/Serves:  10 to 12 pieces
Ingredients:
For samosa wrap:
          1cup all purpose flour
          ¼ tsp Baking powder
          2 tbsp Oil
          ½ cup water (or as required)
          Salt to taste
For the stuffing:
          3 medium Potatoes (boiled and mashed)
          1 Onion (finely chopped)
          ¼ tsp Cumin seeds
          ¼ tsp Mustard seeds
          ¼ tsp Ginger-Garlic paste
          ¼ tsp Red Chili powder
          ¼ tsp Garam Masala
          Salt to taste


Method:
For the dough:
           In a bowl add flour, oil, and baking powder, salt and mix them well. Then add water to knead the dough. Cover with a wet cloth and set aside for 30 min. (dough should not be firm and smooth).
For the stuffing:
          Now make the filling, in a pan add oil, and add mustard seeds, cumin seeds. Lets splutter them.
          Now add onion and ginger -garlic paste, stir them for about 2min.Then add chill powder and garam masala powder and mashed potato and  add salt ,fry them for about 2 to 3 min.
          Meanwhile preheat the oven to 180ºC. and lightly grease a baking tray with oil. 
          Now divide the dough into 5 to 6 equal portion and roll out each portion to circles .Now cut each round into half.
          Now take one-half circle ,then brush the straight edges with a little water. Roll into a cone shape, (bringing the straight edges together) and press tightly to seal it. 
          Now with a small spoon stuff the filling, into the cone. Again brush the exposed dough with a little water, then fold over and press to seal.
          Now repeat this process to make other samosas.  
          Place them to prepared baking tray, Brush with a little oil and bake for about 25 to 30 minutes, or until golden.
          Serve hot with any chutney.

Bread Pudding

Bread Pudding is a rich, heavy cake or pudding made from pieces of bread soaked in milk and baked with eggs, sugar, dried fruit, and spices, can be eaten hot or cold.


Ingredients:
          5 - 6 cups of bread cubes (cut into bite sized pieces)
          4 large Eggs
          ½ tsp pure Vanilla extract
          ½ tsp ground Cinnamon (optional)
          5 tbsp Butter (unsalted, melted)
          1 cup Milk
          ½ cup Sugar
          ½ cup Cream
          ½ dried fruit (optional)


Method:
          Preheat oven to 300 degrees F (150 degrees C) and place rack in center of oven. 
          First lightly grease the baking dish with butter.
          Place the bread cubes and dried fruits in the baking dish. 
          Now with an electric mixer (or you can use hand mixer), beat the Eggs and Sugar until thick.
          Now add the vanilla extract, and cinnamon, melted butter, milk and cream. Beat them again for about 3 to 5 min.
          Then carefully pour prepared creamy mixture over the bread cubes until completely covered. Press down the bread cubes so they get covered. 

          Now prepare a water bath for baking dish. (To prepare a water bath for baking, put your filled baking dish in a larger baking pan and add enough boiling-hot water to the large pan so as the water reach halfway up the side of the smaller pan.)
          And bake for about 1hr (inserted a toothpick in the center of it and if it comes out clean, it means it is done).
          Remove the Bread Pudding from the water bath.
           You can serve it warm or cold with a dusting of confectioners' sugar. Or after cooling, you can decorate with whipped cream.

Cook Tip Tip A water bath is simply a pan of hot water placed in the oven, and using this method has benefits in baking. Like, a water bath adds moisture to the oven and this is important for baking foods like cheesecakes, which tend to crack from the heat of the oven, or custards, which can become rubbery without moisture .
