Mixed Dal

Panchratan dal is an unique North Indian dish. It is exotic mixture of five different lentils cooked together and flavored with spices and onion, garlic, tomato and green chili and chopped coriander leaves.


Makes/Serves: 3 to 4 servings


Ingredients:
          2tbsp Chana dal 
          2tbsp Moong dal
          2tbsp Masoor dal 
          2tbsp Arhar dal 
          2tbsp Urad dal 
          1 green Chili 
          2 red Chilies  broken
          1tsp Ginger -Garlic paste
          1 finely chopped Tomato 
          1 finely chopped Onion
          ½ tsp Cumin seeds 
          ½ tsp Coriander powder
          ½ tsp Turmeric powder 
          1 to ½ tsp garam masala powder
          ½ tsp Asafoetida powder
          2 tbsp Oil or Ghee
          Chopped Coriander leaves
          3 to 4 cups water 
          Salt as required

Method:
          Soak all the dals in water for 1 hr. 
           Pressure cook the dals with 2cups of water for 3-4 whistles or till they are completely cooked. If the dal mixture looks thick, then add some water and stir to get a medium consistency in the dal.
           In another pan, heat Oil or Ghee. Add cumin seeds. Let them splutter.
           Then add the Ginger -Garlic paste and green chili. Fry them for a minute.
           Add Onion and Salt cook it for about 2 to 3 min on medium heat.
           Now add the chopped Tomatoes, Asafoetida, Turmeric powder, Coriander powder and Garam Masala powder.
           Fry the masala well on a low flame till the Tomatoes and Onion become soft and mushy.
          Now add the dal to this fried tempering mixture and mix well.
          Simmer the dal for about 5 to 8 min so that all the flavours of the spices infuse well with the dal.
          Add Coriander leaves. 
          Serve mixed dal with rotis, rice, jeera rice.
