Kadai Mushroom

Kadai Mushroom is a very delicious, flavorful dish prepared with mushrooms. It goes very well with chapatis, parathas and rice.


Ingredients:
          200gm Mushrooms (washed and sliced)
          2 cups Red, Green, and Yellow Capsicum (diced)
          1 big Onion (diced)
          2tbsp Onion paste
          2 tsp Ginger-Garlic paste
          1 cup tomato puree
          1 tsp Coriander seeds
          ½ tsp Red Chili powder(optional)
          ¼ tsp Turmeric powder
          1 tsp Cumin seeds
          2 dry Red Chilies
          4-6 Black Peppercorns
          1tsp dried Fenugreek leaves
          2 tbsp Oil or Ghee
          1tsp Garam Masala powder
          2tbsp Cream
          2tbsp chopped coriander leaves
          Salt to taste


Method:
          Heat a pan on medium heat and dry roast Coriander seeds, Cumin seeds, Black Peppercorns and Red chilies for few min. until nice aroma comes. Let them Cool down and grind to a slightly coarse powder, Set aside.
          Heat oil in a pan on medium heat, add Onion paste, Ginger-Garlic paste and sauté till onions turn slightly brown in color. Next add all the spice powder like grinded spice powder, Chilli powder, Turmeric powder and sauté for a minute.
          Now add Tomatoes puree. Then add ½ cup of water and let it cook for about 5 min on low heat.
          Meanwhile in another pan add 2tsp oil, and then add diced capsicum and onion. Sauté them for 2 to 3mins.Take them out and set aside.
          Now in the same pam add mushroom and sauté for 2mins and Take them out and set aside.
          Now add mushrooms and capsicum and onion to the tomato gravy and cook till it turns soft. It will take about 5 min.
          When the gravy starts giving a nice aroma, and the consistency is semi thick add garam masala powder and kasoori methi.
          Then add fresh cream and give a quick stir and switch off the flame.
          Finally garnish with coriander leaves.
          Serve with veg pulao or plain steamed basmati rice.
