Grill Chicken on Stove-Top (Grill Pan Method)



Ingredients:
          500gm Chicken 
          ½ cup Yogurt
          2tbsp Olive oil
          1tsp Ginger- Garlic paste
          1tsp Curry powder
          1tsp Paprika
          ½ tsp Chilli sauce
          ½ tsp Black Paper 
          1tsp Tomato paste
          2tsp Lemon juice
          Salt to taste

Method:
          Whisk together yogurt, curry powder, lemon juice, oil, ginger- garlic paste, salt, paprika, black pepper, chilli sauce, tomato paste in a medium bowl. Now add chicken pieces and Place in refrigerator and marinate for 4 to 8 hours.
          Now heat a grill pan to high heat for about 2-3 minutes. Lower the heat to medium-high and  brush oil to the pan and make sure the entire pan is coated with oil.
          Then add the chicken pieces to pan and cook for 7-8 minutes on the first side without moving until the undersides get dark grill marks. Flip the chicken pieces and cook the other side for 7-8 minutes.
          Turn off heat and sprinkle lemon juice.
          Serve hot.

Paneer Kofta

Ingredients:
          1 ½ cup Paneer (Cottage Cheese)
          2medium sized Potato (boiled and peeled)
          ½ tsp Red Chilli powder (or to taste)
          ¼ tsp Turmeric powder
          ¼ tsp Ginger paste (optional)
          ½ tsp Coriander powder
          Salt to taste
          Coriander Leaves
          2 tbsp Corn Flour
          Oil for deep fry

Method:
          Take Paneer in a mixing bowl, to that add boiled Potato, red Chilli powder, Ginger paste, Coriander powder, Salt, Coriander leaves, Corn flour and mix it well.
          Now make small oval size balls from the mixture.
          Deep-fry the kofta balls in medium heat until golden brown in color.
          Serve hot with any chutney.

Malai Kofta Curry

Malai Kofta is a North Indian dish in which Koftas are cooked into a richly flavored tomato cream base sauce. It can be served with roti, rice or naan.

Ingredients:
For Kofta:
          1 ½ cup Paneer (Cottage Cheese)
          2 medium sized Potato (boiled and peeled)
          ½ tsp Red Chili powder (or to taste)
          ¼ tsp Turmeric powder
          ¼ tsp Ginger paste (optional)
          ½ tsp Coriander powder
          Salt to taste
          Chopped Coriander Leaves
          2 tbsp Corn Flour
          Oil for deep fry

For Curry:
          1 Big Onion paste (or sliced)
          1tsp ginger- garlic paste
          2 Tomatoes (chopped)
          1-2 Green Chilli
          3 tbsp Cashew Nuts (Soaked in water for 2 hours)
          ½ tsp Red Chilli powder
          ¼ tsp Turmeric powder
          ½ tsp Garam Masala
          ½ tsp Coriander powder
          1/2 tsp Cumin powder
          2 tbsp Oil
          1tbsp Cream


Method:
For Kofta:
          Take paneer in a mixing bowl, to that add boiled Potato, red Chili powder, Ginger paste, coriander powder, Salt, Coriander leaves, Corn flour and mix it well.
          Now make small oval size balls from the mixture.
          Deep-fry the kofta balls in medium heat until golden brown in color.
For curry:
          Mix cashews, green Chilies and Tomatoes and blend them together to a smooth puree.
          Heat oil in a pan on medium heat, to that add Onion and cook until onion get light brown. It will take about 2min.
          Add Ginger -Garlic paste and cook for a minute.
          Add Tomato puree, mix well, add Turmeric powder, garam masala, red Chilli powder, Coriander powder, Cumin powder, stir well and cook for 5 to 7min over medium heat.
          Add water add salt, stir well and cook for about 5 more min.
          Now add paneer kofta, and cream. Then give a quick stir.
          Serve hot with naan or rice.
