Balushahi is an traditional
North Indian flaky dessert made with maida and deep fried in Ghee. Can be
served as sweet.
Ingredients:

1cup Maida
·
3tbsp Ghee
·
2
tbsp beaten Yogurt (as needed to make a dough)
·
1/4 tsp Baking Soda
·
2cup Sugar
·
1tbsp Lemon juice
·
3 to 4 Pistachios finely chopped (optional)
·
Ghee or Oil for deep fry
Method:
·
In a large bowl mix flour and Baking
Soda.
·
Add Ghee into the
flour mixture and rub them with your fingertips and make a
breadcrumbs mixture.
·
Add the beaten Yogurt and knead
into a soft dough. Cover the dough with a damp cloth and allow it to rest for about
1hr.
·
Divide the dough into equal
portions and shape into smooth balls. Make a slight dent in the center of
the ball with your thumb. Keep the balls covered.

Now place a tawa below the
kadai on medium heat and add ghee or oil when oil get hot make it very low
heat. And Gently slide in the prepared dough balls and deep-fry on
low heat.

Gradually the Balushahi will start
floating to the top. Turn gently and fry the other side till golden. It will
take about forty-five minutes. Remove and drain them on absorbent paper. Set
aside to cool till they reach room temperature.

Now Cook 2cups sugar and 1 cup
water, stirring till you get one string consistency syrup. Add Saffron, Lemon
juice and mix.

Remove the syrup from heat
and dip Balushahi in the syrup all around and remove them. Don’t leave
them in syrup.
·
Mouthwatering flaky Balushahis are
ready.
·
Serve them as sweet.
