Tuna Cutlet

Tuna cutlet is a perfect starter, can be served with ketchup or any spicy chutney.

Makes/Serves: 6 to 7 pieces

Ingredients:
          2 cans Tuna
          1 Potato
          1chopped Onion
          1tsp chopped Ginger and Garlic
          1 chopped Green chili
          1tsp Coriander powder
          1/2 tsp Fennel powder
          1tsp Garam masala
          1/2tsp Pepper powder
          2tbsp chopped Curry leaves
          2tbsp chopped Coriander leaves
          2tbsp Egg whites
          Breadcrumbs (enough to coat)
          Salt to taste
          Oil for deep frying

Method:
Open the Tuna cans and drain any excess oil or water and keep aside.
Boil the Potatoes with some Salt and mash them well and keep aside to cool.
Heat oil in a pan on medium heat and add chopped Onions, Ginger and Garlic, Green Chili and Curry leaves. Cook till the Onions becomes soft and start changing the color.
Then add the Tuna chunks and Coriander powder, Fennel powder, Garam masala, Turmeric powder and mix well and such that each Tuna piece is well coated with the spices . It will take about 3 to 5 min.
Now in a bowl add Tuna mixture and boiled potato. And combine them very well
Prepare small flat and round cutlets by taking small tennis ball sized tuna-potato mixture and gently pat it to form a disc shape of even thickness.
Gently dip each cutlet into the egg and place it on the plate with the breadcrumbs and coat it on both sides with the breadcrumbs. Do this one by one very gently.
Heat oil in a pan on medium heat. When the Oil is really hot (not smoking) add the cutlets and fry it till its golden in color. Drain on a paper towel (you can shallow fry them).
          Serve hot with ketchup.

Cook Tip: Be careful while adding salt, since the canned tuna is already salty. You could serve the Tuna cutlets as it is or turn that into patties for burger.
