Chenna or Paneer

Chenna is an another variety of Indian cottage cheese prepared from fresh milk.

Ingredients:
500 Milk of full fat Milk
          3 tbsp of lime juice

Method:
Bring the milk to boiling and then turn of the flame and leave it for 1to 2 min.
Now add 2 tbsp of the lime juice and stir gently. You will find that the cheese starts separating from the whey. If it still seems milky, add some more lime juice.
When the cheese has completely separated it will about 2-3 mins and pour into a colander lined with a cheesecloth or clean cotton cloth. Run this under some cold water at the sink. (This step is to remove the flavor of the lime  juice imparts to the cheese.)
Gather the ends and squeeze tightly. Tie a knot and hang it over a tap and leave it to drain for 30 mins.
          chenna is done.
