Chenna or Paneer
Chenna is an another variety of
Indian cottage cheese prepared from fresh milk.
Ingredients:
•
500 Milk of full fat Milk
•
3 tbsp of lime juice
Method:
•
Bring the milk to boiling and then turn
of the flame and leave it for 1to 2 min.
•
Now add 2 tbsp of the lime juice
and stir gently. You will find that the cheese starts separating from the whey.
If it still seems milky, add some more lime juice.
•
When the cheese has completely separated it
will about 2-3 mins and pour into a colander lined with a cheesecloth or clean
cotton cloth. Run this under some cold water at the sink. (This step is to
remove the flavor of the lime juice
imparts to the cheese.)
•
Gather the ends and squeeze
tightly. Tie a knot and hang it over a tap and leave it to drain for 30 mins.

Chole (Chickpea) Salad
Chickpea Salad is very tasty and
easy to make.
Ingredients:
•
1 cup Chickpeas (boiled, drained
and mashed)
•
2 stalks celery, finely chopped
•
1/2 Onions, thinly sliced
•
1/4 cup finely chopped Tomato
•
2 tbsp mayonnaise
•
1½ tsp fresh lemon juice (or to
taste)
•
Salt to taste
•
Freshly ground Black pepper
•
Chopped Coriander leaves
Method:
•
In a large bowl, mix all the ingredients.
And mash them very well.
•
Serve with toasted bread as sandwich
or serve with chips or Papad.

Bread Pudding
Bread pudding is a sweet dish
made of bread and milk. It is very quick and very easy to make.
Makes/Serves: 3 servings
Ingredients:
•
500 ml. Milk
•
6 slices of Bread
•
1/2 cup Sugar
•
2 tsp. chopped mixed Nuts
(dry fruits)
•
1 tsp. Ghee
•
2 tsp. fresh Malai (Cream)
•
1/2 tsp. Cardamom powder
•
Few threads of Saffron
Method:
•
Boil Milk till reduced to half. Add
Sugar, Cardamom powder and Saffron (Sugar should dissolved in a little milk)
towards the end of the process.
•
Cut the Bread slices into round
shape with the help of a round object of sharp edge (or give any shape as you
like).
•
Apply a little ghee on both
sides and toast it on a tava very lightly.
•
Now mix the nuts with the Cream or
Malai and apply on one side of two bread pieces then place the other
pieces on top of each (like a sandwich). Repeat the process to other bread
pieces.
•
Place it on a serving dish
and pour the thick milk over it.
•
Garnish it with chopped nuts
or 1-2 threads of saffron.
•
And serve (hot or cold).
