Dahi vada

Dahi vada is a very popular amazing street food of North India. Dahi vadas are deep fried Urad dal pakora ,which is  first soaked in water and then after squeezing the water out, transferred to thick beaten yogurt and flavored with  topping  tamarind and coriander chutney and sprinkle red chili powder roasted cumin seed powder and chaat masala.



Ingredients:
          1cup white Urad dal (washed and soaked for 6hrl)
           Pinch of Asafetida (optional)
          1tsp Baking soda
          ½ tsp roasted ground Cumin seed powder
          ½ tsp Chaat Masala
          ½ tsp Red Chili powder
          ½ tsp Chaat Masala
          2 cup plain Yogurt
          1tbsp Sugar
           Salt to taste
          2 tbsp Tamarind chutney
          Oil for deep frying

Method:
          Drain all the water from dal and blend the dal to very creamy texture. Use only little or water as needed to blend. do not use too much water for blending .
          Whip the dal batter, for about 2 to 3 min, until batter is light and fluffy.Add the salt to taste.
           Heat the oil in a pan and Place one tablespoon of batter into the oil. Fry the vadas until golden all around.
           After you have made all of the vadas, place them in lukewarm water and soak for about 20 minutes. Squeeze the vadas  gently to remove the water and bring out them to a serving dish.
          Now  mix  Yogurt and Sugar and beat until smooth.  Add Salt to taste.
          Now Soak vadas in the yogurt batter.
          Now, sprinkle some roasted Cumin powder, Red Chili powder, Chaat Masala and finish off with a drizzle of Tamarind chutney.

Cook Tip: You can make the dahi vadas in advance and freeze them. When needed soak them in hot water for about half an hour, then proceed according to the recipe.
