Baingan Ka Bharta

Punjabi Baingan Ka Bharta is very delicious. Which is flavored with roasted 
Baingan cooked in onion and tomato gravy with aromatic Indian spices.



Ingredients:
          1 Eggplant (medium sized)
          1/2 cup finely chopped Onions 
          1/2 cup finely chopped Tomatoes
          1/4 tsp Turmeric powder
          1/2 tsp Chili powder
          1/2 tsp Garam masala powder 
          1 tsp Cumin seeds
          1 tbsp finely chopped Garlic
          2 to 3 slit Green Chili
          2tbsp Oil or Ghee
          Chopped Coriander leaves for garnishing
          Salt to taste

Method:
          Wash the baingan / eggplant thoroughly in water and wipe with kitchen towel.
          Apply Oil on the Baingan on all sides. Also prick the Baingan with the knife so that the Baingan will cook faster and cook well from inside. 
           Now keep it on a hot griddle tawa in reduced flame. Roast the baingan all the sides .It will take about 10 to 15 min. Once the Baingan is roasted it will give nice smoky aroma. Remove the Baingan from flame.(or put it in the oven at high heat and bake for about 45 min. Every 15 min rotate the baingan so that it will cook evenly from all side.)
          Once cooled, peel off the skin and remove the stem part of roasted Baingan. Chop the roasted Baingan into small pieces using a knife.
           Now Heat oil in a  pan and add cumin seeds let them splutter.
          Add chopped Garlic, Onion and Salt ,sauté it till the Onion is nicely cooked.
          Add Tomatoes and let them get cooked until they are soft.it will take about 5 min.
          Now add spices: Red Chili powder, Turmeric powder,  Garam masala powder and sauté for 2 min.
          Add roasted Baingan and mix it well and let the Baingan gets cooked on slow flame for another 3 min. Turn off the flame.
          Garnish the Baingan Bhartha with some freshly chopped coriander leaves.
          Serve hot with Chappati, Phulkas , plain Rice or Jeera Rice.
