Kochur Loti or Colocasia stem/shoots is
a very popular vegetable of East Bengal. Kochur Loti with Chingri is
one of the most popular Bengali delicacy, goes very well with rice.
Ingredients:
•
500 gms Kochur Loti, cut into 2 inch strips
• Handful of Small cooked
Shrimp (chingri)
•
Small piece of Tamarind
• ½ tsp Coriander powder
• ½ tsp Cumin powder
• ½cup chopped Onion
• ½ tsp Turmeric powder
• 1tsp Chili powder
• ½ tsp aamchur powder
• Salt to taste
• 2tbsp Oil
Method:
•
Boil the loti in water with a
little Tamarind till they are tender.It will take about 10 min. Drain
well.
•
Heat oil in a pan and add Onion and
Salt and fry until onion oozes out all the water
•
Add Turmeric powder, Chili
Powder, Coriander powder, Cumin powder and Aamchur powder and fry for a couple
of minutes.
•
Add the loti and mix well and cook
over medium heat stirring all the time for about 10 minutes.
•
Add the Shrimp and cook for 3
to 5min more minutes.
• Add Coriander leaves and
remove from heat.
•
Serve with rice.
