Mutton Kaleji Bunai

The Liver is considered to be the most nutritious part of the Baby Goat or Lamb (or Beef). It is very rich in proteins, iron and Vitamin. Mutton Kaleji Bunai is a tasty non-vegetarian comfort food and makes a great side dish or accompaniment for a meal.



Makes/Serves: 3 to 4 servings

Ingredients:
          250 grams Goat Liver 
          1chopped Red Onion (big size)
          2 tbsp Ginger Garlic paste
          1/2 tbsp Turmeric powder
          1/2 tbsp Red Chili powder
          1tbsp Coriander powder
          1tbsp Cumin powder
          1tbsp Cumin seeds
          2 tbsp Garam Masala
          2 Tomatoes (sliced)
          5 to 8 Green Chili (cut vertically)
          2tbsp Curd
          1 Cinnamon stick
          1 Bay leaf
          3 to 4 Cardamom
          4 to 5 Cloves 
          5 to 6 Black Pepper
          2tbs Kasuri Methi
          3tbsp Ghee or Cokking oil
          Chopped coriander leaves.
          Salt to taste



Method:
          At first Wash and clean the Mutton Liver.
           In a pan add ghee. Then, temper it with the Black Pepper, Cinnamon stick, Bay leaves, Cloves, and Cardamom and Cumin seeds. Add the Onion and Ginger-Garlic paste ,fry for about 5 minutes. You will notice the Oil separating from the mixture.
           Now add the mutton liver. Cook at a medium flame for about 5 to 8 min. you will see liver losing water.
          Now add Turmeric powder ,Chill powder, Coriander powder. Cumin power, and stir it and cook it for about 2min .
          Then add Tomatoes and stair it and cook them for about 10  min with lid off.(you have to cook mutton liver with lid off)
           Now add Curd and stir it and cook it for about 10 min . You will notice the oil separating from the mixture. (All this while, ensure that the heat is on medium). Add Green Chili .
          Now add Kasuri Methi and Garam Masala, and Salt and give it good stir. Cook for about 1min.
           And then sprinkle chopped Coriander leaves. 
And turn off the heat. 

          Serve hot with either Rice, Luchi  or Parathas.

Cook Tip: It is very important not to over cook mutton liver.  DO NOT add any water in the cooking process also add salt only at the end, else the liver will not be soft and will get toughened.
