    Ras Malai

    Ras Malai or Roso malai is a delicate and flavorful Bengali dessert.  Rasmalai is milk patties soaked in cardamom and saffron flavored milk. This dessert is made with Bengal's famous sweet "Rasgulla or Rasogolla”


    Makes/Serves:  5 Servings

    Ingredients:
    ·      10 Rasgulla or Rasogolla
    ·       ½ gallon Milk
    ·      ½ cup Sugar
    ·      Rose essence
    ·      2 to 3 crushed Green Cardamom 
    ·      2 to 3 pinch of Saffron 

     Method:
    ·      Carefully take out the Rosogolla from the sugar syrup. Squeeze them gently. Keep aside.
    ·      To prepare the Malai, take the 1/2  gallon Milk in a non stick pan and bring it to a boil. Let it simmer on low heat for 20 to 30 min, stirring occasionally. Milk reduces and starts to thicken.
    ·      Add half cup Sugar, rose essence, cardamom and saffron. Mix well.
    ·      Now carefully add Rasgulla  to the hot reduced milk. And Turn the heat off and let it cool completely. Keep it in the refrigerator.
    ·      Garnish with sliced almonds or saffron.
    ·      Serve chilled
