    Shakshouka

    Shakshouka or shakshuka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced. Shakshouka is similar to the Turkish dish menemen, and the Mexican breakfast dish Huevos Rancheros


    Makes/Serves:  2 People

    Ingredients:
    ·      4 large eggs
    ·      2 tbsp extra virgin olive oil
    ·      2 medium plum tomatoes coarsely chopped
    ·      1 large onion thinly sliced
    ·      1 large bell pepper thinly sliced
    ·      3 Garlic cloves thinly sliced
    ·      1 tsp curry powder
    ·      1/2 tsp cayenne papper, or to taste
    ·      1/2tsp black pepper
    ·      1 tsp dry thyme
    ·      1/2 cup cheese (optional) 
    ·      2tbsp Chopped cilantro
    ·      salt to taste

    Method:
    ·      Heat olive oil in a pan add chopped onions, chopped garlic, salt sauté it.
    ·      Add bell pepper add cayenne pepper, curry powder, thyme, tomato cook this for few minutes, 
    ·      And break the eggs one by one and pour on the top of the mixture side by side and cook for few min.
    ·      When egg get set sprinkle the cheese and cook for about 1min with lid on. Turn Off the heat.
    ·      Serve this with bread, chapatti.
