    Zucchini Fritter

    Zucchini fritters are unbelievably heavenly fritters easy to make, low calorie, and the perfect way to sneak in some veggies.


    Makes/Serves:  2/3 People

    Ingredients:
    ·      2 small grated Zucchini
    ·      1/4 cup grated Onion
    ·      1 Egg (beaten)
    ·      2tbsp grated Parmesan (optional)
    ·      1/4 cup Garam flour
    ·      1tbsp Corn flour
    ·      1/2 tsp Baking powder
    ·      Salt to taste

    Method:
    ·      At first toss the grated Zucchini with 1tsp Salt and let sit 10 minutes.  And squeeze out the liquid.
    ·       Now In a mixing bowl add grate Zucchini, Egg, Parmesan, Garam flour, Corn flour, Onion, and Salt and Baking powder mix well.
    ·      Now in a pan heat olive oil on medium heat.
    ·      Now with the help of spoon drop a spoonful of the Zucchini mixture in oil and shallow fry it for about 3 to 4 min per side.
    ·      Repeat this to all the batter.
    ·      Drain on paper towels.
    ·      Serve warm or room temperature with lemon wedges.
