Elo-Jello

Elogelo is popular snack in my native in  Assam. It’s religiously made on many festivals like Eid , Sankranti and Bihu etc.


Makes/Serves: 15 to  20 pics

Ingredients:
          Oil to deep fry
            2 cups of All Purpose Flour  (Maida) 
          ¼ tsp Salt
           ½ cup Warm Water or as required
          1 tbsp Oil (ghee)
          1 Egg (optional)
          ½ Sugar (optional)

Method:
          Take the all purpose flour, salt, and oil in a bowl.
          With your fingertips rub the oil with the flour, to form a breadcrumb like texture.
          Now add egg and sugar, mix well.
          Then add water in parts and begin to knead. The amount of water needed will depend on the quality and texture of the flour.
          Knead the dough till firm.
          Cover the dough with a moist cloth and keep aside for about 10 to 15 min minutes.
          Divide the dough into equal small balls.
          Dust the rolling board with some flour. Roll each ball with the rolling pin to a small circle like small puri.
          Now take one of them make fine lines/cuts with knife leaving its edges. And roll them in cylindrical shape by hand and press the both edges using oil or water. It will give it the distinct flower shape.
          Now in a pan heat the oil and start to fry them until brown
          Serve with tea.

Cook Tip: * in stead of  using  oil you can use  ghee. Quantity will depend on size of puri. Egg and sugar make it crispier.
