Dhokla is a snack from Gujarat and is
popular all over the country. It has many variations, Soji Dhokla is one of them.
It goes well with Tamarind and Mint-coriander Chutneys.
Makes/Serves: 6 to 8 pieces
Ingredients:
For batter,
•
1/2 cup Soji
•
1/2 cup Yogurt
•
1/4 cup water
•
1 pinch Suger
•
1/2 tsp Turmeric powder
•
1tbsp chopped Coriander leave
•
1 tsp Eno
•
Salt to taste
For tempering
•
1tbsp Oil
•
1/2 tsp Mustard seeds
•
2 to 3 green Chili
•
1/2 tsp Sugar
•
3 tbsp water
Method:
•
In a bowl mix Suji, yogurt and
water, beat until smooth paste, lumps should not be there. Let it set for 1hr
•
Now add Salt, Sugar ,and Turmeric
powder, mix well leave it for few min.
•
Side by side greased a tray
and get ready for steam. Pour a large glass of water in steamer and heat
it over medium flame. Grease its tray with oil.
•
Now add Eno to the batter, mix well
it will become fluffy.
•
Pour it into a greased tray and
place in steamer. Steam it for 3 to 5 min over high flame and then reduced
the flame and steam for 15 min.
•
After 15 minutes, insert knife in
it and check, if it comes out clean, means it is ready. If not, then steam it 3
to 5 min more.
•
Take out trays from steamer and let
it cool for 10 min Cut prepared Suji Dhokla
into small squares.

Now make tempering
•
in a small pan ,add oil
,after heating the Oil add Mustard seeds, when seeds changes color add
green Chili ,Sugar and water.
•
Now Pour prepared tempering
over Suji Dhoklas.
•
Serve it with green chutney or
tomato chutney.

Cook Tip: Add Eno just before pouring the batter in greased tray and do
not steam on high flame for long time.
