Piyaji stands for onion fritters.
It is very crispy and very tasty and easy to make and goes very well with tea.
Ingredients:
•
2 medium Onions very finely chopped
(The finer the better)
•
2, finely chopped Green Chilies
•
1/2cup or as required Gram Flour
•
¼ cup chooped Coriander Leaves
•
1tsp Curry Leaves (optional)
•
Salt to taste
•
1/2tsp Baking Soda
•
Water as required
•
Oil for deep frying
Method:
•
In a Mixing bowl add all the
ingredients onions, green chili, gram flour, chopped coriander leaves, carry
leaves, salt, baking soda and water to make a thick paste.
•
Heat oil in a deep-bottomed pan for
frying.
•
Make thin patties out of the onion
mixture on your palm and slowly slip it into hot oil. Fry on both side till
they turn light brown.
•
Remove from oil and place on
absorbent papers to absorb excess oil.
•
Can be served with evening tea.

Cook Tip: You can also shallow fry it.
